They're just covering two ends of the market. I can't stand wearing Pros myself, I can feel the sweat building up in any isolating earbud, and it makes me feel itchy. Would hate for the non-isolating product to disappear.

Contracting for more chips than you can make isn't a fun situation to find yourself in, nobody is doing it for profit (it's actually quite expensive in time, money, and reputation to litigate the fallout).
It happens due to failed estimates (we thought we could start production in January but we couldn't figure out the process until March), upstream supply failures (our surface-mount supplier can't get us enough capacitors), or global market conditions (concrete and steel unexpectedly doubled in price and we can't afford to build the whole building this year).
It happens all the time and isn't your fault (but it is your responsibility to handle).

This is true in the ordinary course of business. But we may be in an extraordinary situation where, if the chipmakers do not overcommit, their stock price collapses today. Given the choice between blowing up now or blowing up 2 years from now, these companies may very well be choosing to blow up in the future. A lot could happen in the meantime, including bankruptcy of their customers. Which would certainly solve their overcommitment problem.
You did well to skip the 2015-2020 era (butterfly keyboards, touchbar).
With that said anything M1 or newer is going to be a delightful upgrade for you. An enormous jump in performance, battery life, and thermal performance.
In 2021, I upgraded to the 2021 MBP from the 2012 first-gen retina. So I also skipped the bad models. The difference is night and day. You don't really notice the notch, especially if you view it as giving you extra space for the menu bar instead of eating into your screen.
In the same way that PowerPC and m68k hardware still works, sure. Apple silicon is so performant that (much like those previous two hardware jumps) it's not worth maintaining support for the old arch at this point.
