Fair enough! I also usually prefer to use web apps so that there’s no need for an extra instance of Chromium that needs to spin up. And following links is also more straightforward if you just open e.g. a specific Notion page or block in a new browser tab.
Having uBlock is also pretty nice in that you can easily block obnoxious panels or buttons used to advertise new product features that you don't care about.

But you know what Electron apps allow me to do? Use my operating system's window management features.
Firefox had a feature to run web apps in extra windows but killed it. There are (virtually) no third party options for it and I have an idea why since I tried to make one.
Chromium has a feature like that but I remember something feeling "off" about it.
If you don't mind the extra setup, you can block domains at DNS level. Something like Pi-hole[1] or NextDNS[2] will prevent those tracker requests in all apps in your device and/or network.
